SQUAB
Venison America supplies our customers with one of the world’s finest delicacies. Squab is known world wide as one of the most succulent dark meats available. This dark, tender and rich meat is best served medium-rare so the consumer can fully appreciate its texture and flavor. Cooking to a medium-rare will allow the meat to remain slightly rosy and moist. If overcooking should happen the squab will have a flavor and texture often compared to liver. It is recommended in many cookbooks to always begin cooking squab by browning the breast, skin side down. This allows the layer of fat beneath the skin to baste the meat as it cooks. As with many small game birds, one bird is generally enough to serve one person. Squab is a bird that will allow the chef to be very creative in their cooking opportunities either in the professional kitchen or the home.
